I woke up this morning and had a craving for blueberry muffins. Since I had some bananas that needed to be used really soon, I decided to try and find a healthy blueberry muffin recipe which I would also use these bananas in. I found what looked to be a good recipe on Allrecipes.com, but it needed some tweaking to make it clean enough for my liking. While the muffins baked, I calculated the nutritional info for these muffins using Sparkpeople.com’s Recipe Calculator (very handy tool!). These banana blueberry muffins are really low in fat and calories, and they actually came out tasting pretty good! I think the recipe “needs” something else, though. I’m not sure what. If anyone has any ideas, please feel free to comment below and let us know!
Ingredients:
- 2 cups white whole wheat flour
- 1/3 cup Sucanat
- 1/2 tsp. ground cinnamon
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 1/2 cups mashed bananas
- 4 egg whites
- 1 tsp. vanilla extract
- 1/3 cup unsweetened applesauce
- 1 cup fresh blueberries
Directions:
- Preheat oven to 350 degrees Fahrenheit. Line 12 cup muffin pan with paper muffin liners.
- In a large mixing bowl, mix whole wheat white flour, Sucanat, cinnamon, baking powder, and baking soda. Set aside.
- In medium mixing bowl, mix together mashed bananas, egg whites, vanilla extract, and applesauce.
- Mix the banana mixture into the flour mixture. Fold in the cup of blueberries.
- Spoon combined batter into lined muffin cups.
- Bake approximately 18 minutes or until a toothpick inserted into the center of a couple of the muffins comes out clean.

Just reading through the recipe, I’d say you need some sea salt. I agree with Whitney, also. Some walnuts would be a good addition, also.
I made these with agave instead of sucanot and substituted frozen berries for fresh blueberries. They came out awesome.
Great recipe, but what about some Fiber one cereal to make them a bit more crunchy? I may try that and let you know.

I do agree they need something else…walnuts is a good option, a little crunch would be nice.
Next time I think i might try adding some nutmeg as well! I have a banana bread recipe that calls for nutmeg and it adds a nice touch!

Cinnamon might be a nice addition, too. I use it in my banana bread recipe.

looks like the recipe needs a small amount of salt. I’d guess this is what you feel is “missing”
Think subbing whole wheat pastry flour instead of the white wheat would work the same?

Yep, I think the whole wheat pastry flour would work well and actually make these not so “heavy.” Let us know how they turn out if you try it.

I would try adding a little coconut oil and use one whole egg and 2 egg whites and a pinch of sea salt. I am going to try this tomorrow. yum!

What about substituting flaxseed meal, wheat germ, and/or oatmeal for part of the flour. Also a tsp. of shredded lemon peel to complement the blueberries.
I made these with 2 whole eggs instead of 4 whites, 1/3 cup maple syrup and sour cream instead of apple sauce and they were delish – thanks for the recipe!
I used walnuts and ground flax :}
These turned out great! I used two whole eggs instead of four whites. I also added some chopped walnuts, sea salt and nutmeg. And I used bananas that I had frozen, which I think really helped sweeten them up.
