I can admit it; I make some downright ugly cookies. I don’t know why, but my cookies are never, ever “pretty,” nor can they even be called “okay” looking. If they are made with real ingredients and taste good, that’s all that matters, I suppose, but still…I’d like to just once make a “pretty” cookie.
If you like the combination of peanut butter and banana and are looking for a clean eating cookie, then you’ll love these Clean Eating Peanut Butter and Banana Cookies. They’re moist and tasty and are by far one of my favorite cookies (second only to chocolate chip cookies, of course).
Now, don’t ask me how to get your cookies to look nice too because, as you can see, I have no business giving on advice on how to make a “pretty” cookie. (Sigh.)
Enjoy!

- 1 tsp. sea salt
- 1/2 tsp. baking powder

- 1 large egg, beaten
- 1 tsp. pure vanilla extract
Directions:
- Preheat oven to 350 degrees.
- Spray a large baking sheet with nonstick cooking spray.
- In a medium bowl, mix together the flour, salt and baking powder.
- In a large bowl, combine maple syrup, peanut butter, banana, beaten egg and vanilla extract.
- Add the dry ingredients to the large bowl of wet ingredients. Combine well, but make sure to not over mix.
- Drop by tablespoon full onto the cookie sheet. Bake for 10 to 12 minutes. Cool on the cookie sheet for 5 minutes, then transfer to a wire rack to cool completely.
