Maple Blueberry Smoothie

This variation of a blueberry smoothie reminds me of blueberry pancakes.  It’s the right amount of sweet and there is just a hint of maple syrup.

For those watching their calories, this blueberry smoothie should probably be considered a mini-meal since it contains:  276 calories per 8-ounce serving, 7 grams of protein, 55 grams of carbs, 4 grams fat, and 5 grams of fiber.

It’s not something I would consider a ’snack,’ and it’s definitely filling enough to keep you satisfied until your next meal and a great way to get in 2 servings (1/2 cup each) of fruit in one meal.  It makes for a great breakfast.  Enjoy!

Ingredients:

  • 2 cups frozen blueberries
  • 1 cup vanilla yogurt
  • 1 cup soy milk or milk of your choosing
  • 2 tbsp. maple syrup
  • 1/4 tsp. cinnamon

Directions:

Place blueberries and yogurt in a blender.  Blend on a medium setting for approximately 20 seconds or until mixed well.  Add remaining ingredients and blend on high until frothy.  Serve.

If you have some Maple Blueberry Smoothie left over, you can store it in a container in the fridge for approximately one day.
