Pumpkin Smoothie

Since I’m putting an effort into eating a lot of foods that will boost my immunity, I’ve had to go in search of some new recipes to add to my collection.  I have tons of cookbooks that have just been gathering dust for the past year or so that I brought out yesterday morning and found some really great recipes.  This is one of those recipes.  I had thought this probably wasn’t going to taste too great and that I wouldn’t be sharing it, so I didn’t take time out to take a picture.  How wrong I was!  And now I’m kicking myself for not snapping a shot of it.  The next time I make it, which will be soon, I will add a picture.

Ingredients:

  • 1/2 cup canned pumpkin (be sure to use canned pumpkin, not canned pie filling)
  • 1/2 cup vanilla soy milk (can use plain soy milk)
  • 1/2 cup crushed ice
  • 1 tbsp. honey
  • 1 tsp. pumpkin pie spice

Directions:

Place all ingredients in blender and process until smooth.

Nutritional Info:  162 calories | 5 grams protein | 34 grams carbs | 4 grams fiber | 2 grams fat

    This smoothie was awesome! It was like a liquid Pumpkin Pie so sweet and tasty. I added a scoop of protein powder and a little extra vanilla soy milk to make it more of a meal and it was divine. Thanks for sharing this recipe.
