These breakfast potatoes are a favorite in my house. I usually serve them with scrambled eggs to make sure there’s a balance of carbs and protein. This potatoes recipe only contains 150 calories and 5 grams of fat. The garlic salt is optional. Enjoy!
Ingredients
- 1 tsp. olive oil
- 1 medium potato, peeled and cut into 1/2-inch pieces
- 2 mushrooms chopped
- 1 tablespoon onion, chopped
- 1/4 tsp. garlic salt
Directions:
- Heat the olive oil in a medium nonstick skillet over medium heat. Add cut potatoes and cover. Cook approximately 8 to 10 minutes to until tender. Stir occasionally while cooking.
- Add the mushrooms, chopped onions and garlic salt. Cook for 5 more minutes or until light brown and cooked through, stirring occasionally.
