Spinach and Cheese Omelet
If you’re looking for a really quick, easy, and nutritious breakfast, then this Spinach & Cheese Omelet is it. Now, I have never gotten the hang of making omelets in a skillet. I have to be honest and say I’ve only tried a handful of times, but each time, it’s turned out really bad. So when I came across this recipe a few months ago in which I can actually make an omelet in the microwave, I was thrilled! 
Obviously this recipe calls for cheese; however, I know there are some folks who eat clean that do not eat cheese. I still eat cheese and it’s just one of those “life’s little pleasures” that I am not willing to give up. I only eat cheese maybe twice a week, sometimes three times per week. If you don’t eat cheese, you could add tomato instead or any other ingredient you choose.

Ingredients:
- 2 eggs
- 1 tbsp. part-skim mozzarella cheese, shredded
- 1/3 cup torn baby spinach leaves
Directions:
- In a microwaveable bowl, beat eggs with a fork until well blended.
- Add cheese and spinach.
- Microwave on high 2.5 minutes or until eggs are firmly set.
