In the January/February 2009 issue of Clean Eating Magazine, there is this scrumptuous looking dessert on page 58 called Bananas & Mocha Cream, and it’s my ‘inspiration’ for this Bananas & Cream clean-eating dessert. The recipe in the magazine calls for 2 tbsp. prepared strong coffee, which I nixed from this recipe. Since having stopped drinking coffee months ago, it’s just not a taste that I desire. I also decided to sprinkle cinnamon on top of my Bananas & Cream, but the recipe in the magazine calls for 2 tbsp. of grated dark chocolate to use as a garnish. So it’s up to you what to top your Bananas & Cream with – cinnamon or chocolate. Either way, this healthy dessert is quick and easy, and is very creamy and delicious!

Ingredients:
- 2 large bananas, sliced into 1/4-inch slices, divided
- 6 oz. low-fat cream cheese
- 6 oz. low-fat cottage cheese
- 1/3 cup sucanat
- 1 tsp. vanilla extract
- Cinnamon or grated dark chocolate
Directions:
- In the bottom of an 9-inch square pan, layer half the banana slices and set aside.
- In a medium mixing bowl, mix cheeses, sucanat, and vanilla. Blend well.
- Spread half the creamy cheese mixture over first layer of banana slices. Top with remaining banana slices and then top with remaining creamy cheese mixture.
- Sprinkle cinnamon on top or garnish with grated chocolate. Place in fridge and chill until ready to serve.








Another great way to do this is to use non-fat greek yogurt, a little agave and whatever fruit you like. So Yummy!
