These sandwiches are so simple and tasty. They quickly became one of my favorite busy night meals!
You’ll need:
1 TBS olive oil
1 medium onion, cut into 1/4 inch thick slices
1/2 cup chopped green or red sweet pepper
3/4 cup barbecue sauce
4 cups shredded rotisserie chicken
6 whole grain buns (toasted if you wish)
Heat olive oil in a large skillet over medium heat. Add onion and peppers and cook until tender (about 5 minutes). Add chicken & barbecue sauce and gently mix together. Simmer until heated through. Spoon mixture onto buns and serve.

Hi Sheena! They are really good and very easy. I am partial to Wildtree bbq sauce, because I represent the co.
The other all-natural one I’ve tried is Annie’s Organic. I don’t like the Smokey Maple, but did like the other flavor. Hope this helps and you enjoy your sandwiches! Jenn

Just looking at this recipe and noticed it called for BBQ sauce. I would think that BBQ being full of sugar, would be a no no. Just wondering.
Hi, I think it depends on exactly where you are in your clean eating journey and how “strict” you are being at this point in time. If you’re in weight-loss or competition mode, yes, you may choose to avoid the added sugars. I, personally feel ok using a moderate amount of all natural bbq sauce as part of a balanced, high protein meal. You can also use Jennifer E’s recipe, which does not include refined sugar. Take care!
