I found two recipes for green beans that have almonds as an ingredient, which is something I love. I think I’ll use one recipe for Thanksgiving and one for Christmas. I’ve decided to include both recipes here because both recipes are full of healthy ingredients and best of all – they’re clean. If you choose one to include in your eating clean holiday dinners, I hope you enjoy!

Almond Green Beans
Ingredients:
- 1 lb. fresh green beans, washed and trimmed
- 1 medium sweet red pepper, julienned
- 1 cup fresh mushrooms, sliced
- 1 small onion, chopped
- 1 tbsp. olive oil
- 1/4 cup sliced almonds, toasted
Directions:
- Put green beans in a large saucepan and add enough water to cover the beans; bring to a boil. Cover and cook beans for approximately 4 to 7 minutes. You want the beans to be crisp-tender.
- While the beans are cooking, in a large nonstick skillet, saute pepper, mushrooms and onion in olive oil until tender.
- Drain the saucepan of green beans and stir into veggie mix. Sprinkle with the 1/4 cup almonds.

Spanish-Style Green Beans
Ingredients:
- 2 lbs. fresh green beans, washed and trimmed
- 2 tbsp. olive oil
- 2 cloves fresh garlic
- 1 small red onion, diced
- 1/4 cup water
- Salt and pepper
- 1 tbsp. fresh oregano
- 1/2 cup chopped almonds, toasted
Directions:
- In a large saucepan, heat olive oil over medium heat. Add garlic, onion, and beans. Once garlic and onion starts to brown, approximately 1 to 2 minutes, add water. Cover saucepan and steam beans to desired tenderness. Remove from heat.
- Season with desired salt and pepper. Add oregano.
- After you’ve transferred the beans to a serving platter, sprinkle with the almonds.








Ahhh both recipes sound great. We are having asparagus for Thanksgiving instead of green beans but mom and dad will be here for Christmas and I might try one of these recipes. The hubs doesn’t like nuts so I’ll just put the almonds in a bowl and whomever wants them can have them. Yum!

Ingredients:
Green beens
Almonds – slivered
Olive Oil
Cilantro
Salt
Sautee almonds in Olive oil until golden brown. Use enough oil to also nicely coat green beans. Make sure you use the right type of olive oil for sauteeing. While doing that cook green beans to just texture you like and drain. Next toss green beans in the olive oil almond mixture. sprinkle with chopped cilantro and top with fresh ground salt to taste. Super easy and amazing!

Great recipes, for my Spanish style I use some tomato sauce,and any nut we have. We tend to eat this one during the winter, and for my summer, I toss cooked green beans with shallots, tomatoes, arugula, 1tsp olive oil, champagne vinegar and S&P.
