Mashed Sweet Potatoes

Mashed Sweet PotatoesFor me, any holiday dinner missing sweet potatoes is just not a true holiday dinner! A tradition at our table has always been a sort of candied sweet potato that my mom makes using just peeled and cut sweet potatoes, a little water, and tons of brown sugar and butter. I’ve replaced my mom’s recipe and will be using the following mashed sweet potato recipe this year:

Ingredients:

  • 4 medium sweet potatoes
  • 1/2 cup orange juice (not from concentrate)
  • 1 tsp. orange zest
  • 1 tbs. brown sugar
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ground ginger

Directions:

  1. Peel and cube sweet potatoes and put in large pot. Cover potatoes with water until the water is about an inch above the potatoes.
  2. On high heat, bring pot of sweet potatoes and water to a boil. Cook for approximately 25 minutes until sweet potatoes are tender.
  3. Drain sweet potatoes and add rest of ingredients. Mash the ingredients until smooth.

Serving Size: 6.

    Would it be healthier to steam the sweet potatoes instead of boiling them?

    Hi Jill,

    The best way to retain the most nutrients in sweet potatoes is by somehow cooking them with the skin still on. You could boil the potatoes and then peel and cut/mash them, but that’s a bit time consuming. If you leave the skin on when steaming them, that would definitely be the healthiest in terms of nutrient value.
