I’m listing this under the lunch category, but it makes for a great dinner as well!
Ingredients:
- 6 oz. boneless, skinless chicken breast
- 1/2 cup tomatoes, chopped
- 2 tbsp. cilantro, chopped
- 2 tbsp. red onion, chopped
- 1/2 cup iceberg lettuce, shredded
- 1/8 avocado
- 1 whole wheat tortilla
Directions:
- Bake or grill chicken breast approximately 20 minutes at 350 degrees. Cool chicken breast and cut into thin slices.
- Place tortilla between 2 paper towels. Place in microwave and heat (on high) for 10 seconds.
- Put all ingredients on tortilla and wrap.





Suggestion: Use romaine lettuce instead of iceburg; better nutrition.
This would be a great use for leftover chicken. I would probably add black beans and some bean sprouts to the burrito. Thanks for sharing.
