These potatoes are delicious and are now on my “favorites” list of clean eating side dishes! I made them tonight for dinner and they are extremely simple and quick to make. These Crispy Garlic New Potatoes make for a great side dish to any protein-packed main dish.
Some of my potatoes came out only crispy on the edges, and some were incredibly crispy. I think my slices were a bit more than 1/4 inch thick, so be sure if you want the potatoes to be nice and crispy, cut the slices thin enough.

Ingredients
- 2 cloves garlic
- Coarse salt (or sea salt if you choose)
- 1/2 tsp. dried thyme
- 1 tbsp. olive oil
- 1 1/2 lbs. red new potatoes sliced in to 1/4 inch slices
Directions
- Preheat oven to 475 degrees Fahrenheit.
- Finely chop garlic. Sprinkle with salt of choosing.
- Garlic needs to be made into a paste-like consistency, so take the back of a chef’s knife and press the garlic with the flat side of the blade back and forth until garlic is a paste. (I also used a garlic press first and then used the blade back as directed above). Place garlic in a small bowl.
- Add thyme and olive oil to garlic paste.
- Place potatoes on a large rimmed baking sheet and toss the potatoes with the garlic mixture. **
- Bake 20 to 25 minutes or until the potatoes are browned on the underside.
** I knew I would make a total mess by trying to toss the garlic mixture and the potatoes on my baking sheet, so I actually put everything in a gallon Ziploc bag, sealed it, and tossed them that way. Much less messy for me, I’m sure!

Yummm, chicken breasts sound really good and they would go great with these potatoes! I’ve also ate these this summer with grilled fish and a lean cut of steak.
I love your recipes, but wish you would post the servings and nutritional info with them. It would make it so much easier for those of us who are counting calories, fats, etc. Anyway you could do this?

I am making this tonight as a side dish with corned beef sandwiches! I can’t wait to try them! They sound both healthy and delicious! I know the corned beef is not healthy, then again it is St. Patrick’s Day!
