Tropical Fruit Salmon

I love this recipe, because it looks kind of fancy, but is very simple to throw together!
Ingredients
- 4 salmon filets (I always look for wild caught vs farm raised)
- 1 tbs olive oil
- 1 tsp fresh grated ginger (about a 1 inch slice)
- 1 or 2 cloves garlic, minced
- 1 15 oz can of tropical fruit mix (I used DelMonte Tropical Fruit in 100% Juice)
- juice of 1/2 lemon
- salt & pepper to taste
Directions
Preheat oven to 350 degrees. Arrange salmon filets in a shallow baking dish. Top with olive oil, lemon juice, grated ginger, garlic and tropical fruit mix (I only used about 2 tablespoons of the fruit juice and saved the rest). Season with salt & pepper. Bake until tender & flaky (about 30 minutes).
